Get Ready for the Next Cover to Cover

The next Cover to Cover is fast approaching. Here are the links to the selected talks:
I love Cover to Cover Meetings because it is my favorite people (you sisters!) talking about how we can be better. You may be thinking, "Alli, how is that any different from Sunday?" Well, we can wear jeans and there is food at the end! What's better than feeling the Spirit and eating good food?
The food theme this month is your "Family's Favorite Dish."

I love you all! I hope to see you at the church on Saturday, March 27th from 10:00 am - 12:00 pm.

"Cover to Cover" Begins!

We will begin "Cover to Cover" on January 30th, 2009 at my house. We'll start at 10:00 am and finish up around 12:00 pm.

Because we are starting at an awkward time in the year- we will not be able to cover ALL talks from October 2009 General Conference. But it's important to get the momentum going so we can have our "A-game" ready for April General Conference.

Please read and study the following two conference talks from the Saturday Morning Session of October 2009 General Conference:

More Diligent and Concerned at Home
Elder David A. Bednar

That Your Burdens May Be Light
Elder L. Whitney Clayton

[These are hyperlinks so you can read them right now if you want!]

Remember to write down one "A-ha!" moment from each talk to share. For more information on this please read the previous post.

After the discussion you can go home or stay for lunch. If you are staying for lunch please bring any kind of salad to share. When I say "any" kind of salad I mean it. Please expand our horizons. Fruit salad. Pasta Salad. Bean Salad. Cracked Wheat Salad. Taco Salad. Something with Marshmallows Salad.

Each month we will have a different theme for lunch. The point of lunch is not to stress you out. It is to give us more time to chat, develop relationships, and to share recipes.

I hope to see you at my house on the 30th. Friends are welcome.

What is "Cover to Cover"?

"Cover to Cover" is an informal discussion group for women to talk about what they learned in General Conference. If you are like me- it is extremely difficult to retain much of what was said the first time around. The goal is to discuss all of the talks before the next session of General Conference. Thus- the name of the group, "Cover to Cover." Please join me in wearing out our General Conference issues of the Ensign! Let's mark em' up!

To prepare for the discussion, read through the talk (or talks) and select one or all of the following:

-favorite story
-quote
-paragraph
-something that made you rethink a principle of the gospel
-whatever made you go "whoa!" or "a ha!"

Everyone will take turns sharing their insights and we will all leave feeling fabulous and uplifted. (Thanks to the Spirit and those awesome "a ha!" stories.)

It is also a goal of mine to record all of the favorite quotes and compile an archive of conference quotes at the end of each 6 month period. Leave a comment if you have any ideas on how this "quote archive" should look. We could also post the favorite quotes on the blog.... hmm.... again- post a comment if you think this is a good idea.

I am thinking we will be meeting 1-2 times a month in the evening. Please leave a comment if you are interested in joining "Cover to Cover" with your availability. You can also sign up during Relief Society.

Divine Destiny Recipes

It is fabulous to have a ward full of amazing cooks. Below are the recipes for the delicious food we ate at the Divine Destiny Dinner.

(Thanks Tonya!)

Pork Tenderloin

1/4 cup soy sauce
5 cloves garlic minced
1/2 tsp. ground ginger
2 TBS brown sugar
3 TBS honey
1 tsp. sesame oil (dark)

Marinade meat all day. Roast according to directions on tenderloin package. This is enough marinade for 2----3/4 lb tenderloin roasts.

Because we were on a tight budget, I use pork loin, it is a cheaper cut of meat. I also substituted cooking oil for the sesame oil because of cost. Because I purchased the meat at Sam's club, there are no directions on the package so this is how I cooked the meat. I cooked 19 pounds, therefore it had to cook longer than a small family meal. I placed the loin on a rack on a baking sheet uncovered. I cooked it at 450* for 15 min. then I turned the oven down to 325* for 1 hour 45 min. I made sure the loin had reached an internal temperature of 155* before I removed it. Then I allowed it to rest for 15 minutes before I sliced it. If you slice it too quickly all the natural juices will run out of the meat and it will be dry. I had cooked extra marinade and skimmed it previously. I place it in the roaster and then placed the sliced meat in the marinade to keep it from drying out, since this is usually served directly after slicing.

Spinach Strawberry Salad

2 bunches spinach (I like baby spinach)
1 pint strawberries
sliced almonds

Dressing:
1/2 cup sugar
2 TBS sesame seed
1 TBS poppy seed
1 1/2 tsp. minced onion
1/4 tsp Worcestershire sauce
1/4 tsp. paprika
1/2 cup cooking oil
1/4 cup cider vinegar

I have made the dressing without the sesame and poppy seeds, it is still great. This is a regular at our house in the spring when baby spinach and strawberries are in abundance in our garden.

Twice baked potato (Chris did all the work on these)

baking potatoes
sour cream
butter
potato toppers (the only place I have found these is at Safeway)
shredded cheese
salt and pepper to taste

Bake potato, allow to cool, split, scoop centers, smash with extras, refill skins, reserve a bit of cheese to sprinkle on top. Bake just until hot.

Bread Rolls

4 1/2 cups luke warm water
2 large TBS yeast
6 large TBS sugar
2 large TBS salt
1/4 cup shortening
start with 7 cups of flour make knead in up to 11 depends on humidity and length of kneeding.

Kneed all together, place in large greased bread bowl to rise in a warm place. Allow to rise until doubled in size, punch down, allow to rise again. Place in pans in desired form and allow to rise again. Bake 400* for 15 min or until golden.

Glazed Carrots

Steam 3/4 pound carrots for 8 min, until tender crisp. Melt 1 TBS butter and 1 TBS brown sugar in a pan. Allow this to start to bubble and caramelize add carrots back to this and stir until completely covered and glazed. (I was not please with how these turned out. I had too many for my pan at the church and they did not glaze properly. I should have done them at home, but I was concerned they would be soggy and I don't like over cooked carrots.)

Final Reminders for Super Saturday

It’s not too late! We still want to see you at Super Saturday even if you didn’t sign up for a project. We will have extra materials for the fabric ornaments. You are also welcome to come chat and eat lunch starting at 11:00 am.

Many of the projects will require using paper adhesive. The RS will provide acid-free glue sticks. If you prefer another adhesive (tape runners, zots, zips, pop dots, etc.) please bring your own.

Are you working on the following projects? Christmas Tree Cards? Quiet Books? Magnetic Notepads?
We will have scissors and paper trimmers at every station. However, if you bring your own cutting tools it will guarantee you have them at each project station. No waiting in line.

Nursery will be available from 9-1:00 pm. Please be courteous and finish your projects by 1:00 and rescue the babysitters from your children.

The 300 Loaves of Bread orders will be ready to pick up at the church during Super Saturday. Please make arrangements to take your orders home. Deb Mobley will also have a special “Canning Corner” if you would like to start canning some of your supplies (sugar, wheat, etc.). If you have questions, please contact Deb.

See you on Saturday!
